Enzymes are produced by living plants and animals.  They cause changes in other substances without changing themselves – enzymes act as catalysts.  In living plants, enzymes serve the metabolic function of building new tissue.  High temperatures can destroy enzymes, but they are rendered inert by low temperatures.  Fruit that has been refrigerated is an excellent example of a living plant containing inactive enzymes.  A peach bought at the supermarket may appear ripe; however, if it has been kept at low temperatures, it will be hard and tasteless or bitter.  After it has been warmed to room temperature for 24 to 48 hours, it will be softer and taste better – the enzymes contained in the peach have resumed the ripening and maturing process.

Living enzymes in the food we eat initiate the digestion of that food while it is in the stomach.  Much of the natural digestion of our food should occur in the stomach through the continued ripening and maturing process brought about by the enzymes necessary to digest (ripen) their constituent parts – carbohydrates, proteins, and fats.
